The goal is to rejuvenate the terroir and bring the art of winemaking back into the marketplace because as all savvy winemakers know, sustainable luxury is a growing trend that future generations of wine lovers are embracing. From the growing popularity of Pet Nat wines to wine is eco-friendly packaging, the next generation of consumers are asking for environmentally friendly solutions.

Many old-world wineries are quick to understand the benefits of sustainable practices in both the vineyard and the winery, and they are implementing sustainable growing, packaging, and delivery solutions.

A Green Deal Report on Wine

The European Union&rsquo;s Green Deal announced in 2020 has put sustainability firmly at the heart of the current and future policymaking in Europe. (1) And The study on the state of play of sustainability initiatives in the wine appellation sector attached &ldquo;provides insights and recommendations to the European wine appellation sector on potential future approaches to sustainability, taking into account the urgency to respond to the challenges posed by climate change, among others, and the ambitious targets set by the EU&rsquo;s sustainability agenda for agriculture and food production.&rdquo; (2)

Within the European wine appellation sector, the majority of PDO wine producer groups strongly agree that the definition of &lsquo;sustainable wine&rsquo; involves primarily efforts that are associated with the protection of the surrounding environment and local heritage and namely:

<ul>
	<li>&lsquo;Protect biodiversity and the landscape&rsquo; (68% of the respondents).</li>
	<li>&lsquo;Prevent harming the natural environment while producing the wine (e.g., reduction of pesticides, fertilizers, water, no in-row weeding etc.)&rsquo; (65%); and,</li>
	<li>&lsquo;Preserve regional or local heritage and traditions&rsquo; (57%). (3)</li>
</ul>

Consumers Are Asking for It

According to the study, the most prominent drivers pushing a PDO wine producer to develop or adhere to a sustainability initiative are that:

● &lsquo;Consumers are asking for it&rsquo; (93% respondents selected this driver as one of the five most important ones);

● &lsquo;They want to protect biodiversity and the landscape&rsquo; (88% respondents selected this driver as one of the five most important ones).

● &lsquo;They want to limit the impact of wine production on the environment&rsquo; (83% respondents selected this driver as one of the five most important ones); and,

● &lsquo;They feel it is the right thing to do&rsquo; (82% respondents selected this driver as one of the five most important ones and 34% respondents selected this option as the most important driver). (4)

A Sustainable Wine Industry

Floods. Fires. Famines. Once upon a time these national and international disasters were a once in a lifetime occurrence. Now they are the new norm for most countries across the globe.

Winemakers from California to Queensland have seen the seen the impact of climate change in their vineyards, and they have no choice but to rethink how they will manage the vineyard to cope with rising temperatures, increased or decreased rainfall, and nutrient-depleted soil.

The Future of Wine - Sustainable Luxury

Wines from grapes grown in higher altitude areas with cooler climate has become quite the trend recently. This specific growing environment gives intense flavor but elegance and freshness to the final wines. To highlight and champion these conditions more and more winemakers are starting to use alto as a marketing and labelling term to show their grapes were grown in high altitude vineyards.

Brut is a word often seen on labels for different kinds of sparkling wine. As you may have discovered when drinking these wines, it indicates that the wine is dry, meaning there is no perceived sweetness in the wine. But how about Extra Brut or Dry, what do they mean and are they the same as Brut?

Semi-sweet Riesling, a type of wine falling out of style. It’s a shame, since these wines are perfect to pair with flavorful cuisines like Asian or Mexican, or simply drink as they come under the summer sun. The higher level of sugar left in the wine also means that the alcoholic fermentation was stopped before finishing, providing a wine with lower alcohol level and therefor easier grabbing a second glass of.

Have you ever heard the word Xinomavro? Most have not. It is however a word on many sommeliers’ lips today, as it happens to be considered the grape variety with the highest quality in Greece, and one that is trending at the moment. The fact that Greece have been making wine for a long time comes as no surprise, but they have never exported an amount to make sure wine lovers around the globe tried it. With the growing wine tourism many have discovered these wines and are serving them in wine bars and restaurants in many countries today.

Chianti Classico, Valpolicella Classico, Soave Classico… Why do all these Italian wine regions have the Classico addendum and what does it mean? What is the difference for wines labeled as Classico?

Classico is a wine term in Italy seen on a few wine labels and it indicates that the wine’s from the historic center of the region, the heart. Using Chianti and Chianti Classico and their Sangiovese-based red wines as an example, Chianti is a rather large wine district within the Tuscany region. Chianti Classico is located withing Chianti as the central part and the one that originally existed. Back then this smaller region was actually called Chianti, but as the region grew the quality of the wine plummeted and the well-known characteristics of these red wines were watered down. The reputation took a hit and sales diminished. Eventually this led to the creation of Chianti Classico, which would be drawn from the original Chianti borders to recover the typicity of these wines. Today the quality of both Chianti and Chianti Classico have risen a lot due to modern techniques and knowledge about pruning, planting and temperature control in the winery.

Chablis – one of the more popular styles of wine today and a region known by many. Most are familiar with the word Chablis and the light, fresh white wine with a touch of minerality it brings. Even though it’s a renowned wine, few knows what it really is.

Many grape varieties around the world of wine have names local to the region or country they’re grown in, even though they’re exactly the same. The most famous example would be Syrah in France where the same grape is named Shiraz in Australia. Another variety with two names is Pinot Grigio, or Pinot Gris.

A podcast where, in each episode,&nbsp;we will review a Wine List from your favorite restaurants. I&rsquo;m your host Robert Tas along with Michaela Quinlan, certified sommelier.

Hello Michaela,&nbsp;it&rsquo;s great to be back together for another episode.

MQ: Hi Robert!

RT: Before we jump in, let&rsquo;s talk about CorkRules.

RT:&nbsp;So, sit back and listen as we review your favorite wine list.

RT: Today we are talking about Moo. This stellar steakhouse in Boston&rsquo;s historic Beacon Hill is a must-visit. They have also opened a second Boston location in the Seaport. Moo is not only your classic steakhouse for evening dining, they also feature breakfast and lunch, along with an excellent bar menu.

Michaela, I can&rsquo;t wait to hear what you think of their wine list.

MQ: As I am sure we are all aware, the restaurant industry is a difficult one, and it is always exciting to see them thrive. Moo has a spectacular wine list featuring Old World and New World favorites. They even feature a gorgeous wine cellar for private events.

RT: That&rsquo;s really great, as you looked at the list did you see anything jump out at you?

MQ: Of course, we will begin with the 2020 Jean-Luc Millet, Sancerre, from the Loire Valley of France. I personally enjoy the minerality, bright acidity, and citrus of the Sauvignon Blanc from Sancerre. It is certainly one to consider as an aperitif, or to pair with lighter fare, and shellfish.

RT: That is a great way to get started. Did you find any others that caught your eye right away?

MQ: I was fortunate to visit a number of wineries in the Willamette Valley in Oregon a few years ago, so I always check out which wineries are featured in each menu. One to consider, and a personal favorite, is the 2019 Averaen, Pinot Noir from the Willamette Valley in Oregon. This pinot noir is well balanced featuring ripe red cherries and cranberries, along with notes of smoke, spice, and a mineral finish. A well-structured wine that will complement any of the proteins on the menu.

RT: So Michaela, their list seems to have lots of range but was there anything that you would say is a &ldquo;must-try&rdquo;?

MQ: Of course, we have to feature a full-bodied red wine for Moo&rsquo;s fare, so another to consider would be the 2016 Cesari, Amarone della Valpolicella Classico from the Veneto. This Valpolicella consists of 100% Corvina. This rich, dry red wine features plumb, ripe blackberries, cassis, smoke, and notes of vanilla on the finish.

RT: These are some great calls.

So, you know I&rsquo;m getting thirsty and will need to order a bottle with my dinner, where would you guide us?

MQ: Absolutely! Heading over to Australia, a highly rated selection to consider would be the 2017 d&#39;Arenberg, &#39;The Dead Arm&#39;, Shiraz, from McLaren Vale. Here we have another rich, red wine. This Shiraz features all the incredible aromas and flavors of blackberries, blackcurrants, vanilla, and a touch of cocoa, with notes of spice and eucalyptus on the finish.

RT: Ooh, Terrific.

Michaela, speaking of price, sometimes people have a budget in mind.&nbsp; any other great value wines you&rsquo;d point us to?&nbsp;

MQ: 2018 Eugenio Collavini T Friulano, Collio

RT: Now Michaela, what if I have a big client dinner or special occasion where I want to take it up a notch?

MQ: There are so many options depending on how many notches you are looking to scale, however, a classic stood out as one to consider. The 2002 Heitz Cellars, &#39;Martha&#39;s Vineyard&#39;, Oakville
